Description
Xanthan gum is a light yellow to white movable powder, easily soluble in cold and hot water, neutral solution, resistant to freezing and thawing, insoluble in ethanol. Disperses with water and emulsifies into a stable hydrophilic viscous colloid. Xanthan gum is a kind of monopolysaccharide produced by the fermentation of Pseudxanthomonas. Because of its special macromolecular structure and colloidal properties, it has many functions, and can be used as emulsifier, stabilizer, gel thickener, infiltrating agent, film forming agent, etc.
Advantage:
● Suspension and emulsification: Xanthan gum has a good suspension effect on insoluble solids and oil droplets.
● Good water solubility: Xanthan gum can be quickly dissolved in water and has good water solubility. Especially in cold water can also be dissolved, can save complicated processing process, easy to use.
● Thickening: Xanthan gum solution has the characteristics of low concentration and high viscosity (the viscosity of 1% aqueous solution is equivalent to 100 times that of gelatin), and is an efficient thickener.
● Stability to heat: the viscosity of xanthan gum solution does not change greatly with the change of temperature.
● Stability to acid and base: Xanthan gum solution is very stable to acid and base, and its viscosity is not affected at a PH of 5-10.
● Stability of salt: Xanthan gum solution can be miscible with many salt solutions (potassium salt, sodium salt, calcium salt, magnesium salt, etc.), and the viscosity is not affected.
