Mannitol

Mannitol, chemical formula C6H14O6, is a white crystalline solid that is similar in appearance and taste to sucrose. It belongs to the hexanol group of substances, is a commonly used dehydrating agent, has diuretic effect, but also can be used as a sweetener.

Advantage

Mannitol has the following functions in food processing:

● Sweetener: Mannitol has a sweet taste and its calorific value is only about half that of sucrose, so it is often used as an alternative sweetener with a low caloric value. It can provide sweetness in foods and beverages while reducing caloric intake.

● Antistick agent: Mannitol is often used to prevent food from sticking because of its low water absorption. For example, use ‌ as an anti-stick powder in chewing gum, maltose, rice cakes and other foods.

● Humectant: Mannitol has good moisturizing properties, can absorb moisture and maintain the water balance of food.

Improve texture and taste: Mannitol can make food and drink to maintain the appropriate taste and texture, in line with consumer taste needs.
