Description
What is Gellan gum?
Gellan gum is a kind of polysaccharide produced by microbial fermentation. The main components are glucose, glucuronic acid and rhamnose in a ratio of 2:1:1. It has good gel properties, can form a solid gel at a very low concentration, and is sensitive to shear force and melts in the mouth. Gellan gum is insoluble in non-polar organic solvents and cold water, but can be dissolved in water to form a transparent solution after heating, and form a transparent gel after cooling.
Gellan gum dry powder is beige, no special taste and smell, about 150℃ without melting and decomposition. Good heat and acid resistance, high stability to enzymes.
