Description
Curdlan is a kind of natural polysaccharide produced by microbial fermentation, belonging to β-1, 3-glucan. Its name derives from the English "curdle" (solidification) and is known for its unique thermal gelatinization. Since its discovery in the 1960s, it has been widely used in food, medicine and industry.
Curdlan is white to nearly white powder, odorless, with good fluidity. In the dry state, it maintains excellent stability. Curdlan forms a reversible gel at 55-65 ° C and returns to liquid after cooling. It forms a thermally irreversible gel above 80 ° C and remains solid even when cooled, suitable for high-temperature processed foods. Insoluble in cold water, soluble in alkaline solution or DMSO and other organic solvents.
